Step by Step Method

Step 1

Preheat oven to broil (high).

Step 2

On a large cookie sheet add the sausages, tomatoes and vegetables (-garlic), toss and try to get them in one layer. Sprinkle with the olive oil; toss and sprinkle with salt and pepper.

Step 3

Place in oven under broiler for 10-20 minutes (mine took 20 minutes) or until charred and tomatoes are blistered. Serve with cooked pasta or by itself. I think this also good to put in sub rolls with a bit of cheese.

It was quick and easy as well as tasty! I used chicken Italian sausage split in half. Served over cauliflower "rice" and it was a hit with DH and me!

This was such an easy sheet pan dinner. I used spicy Italian sausage. The roasted tomatoes add a bright, acidic burst of flavor. Very much enjoyed!

Made with lovely home grown cherry tomatoes, yellow and green peppers. I did scale the sausages back for 2 servings. Loved every bite. This is another that is a keeper!
