Step by Step Method
Step 1
In the bowl of an electric mixer beat the cream cheese and honey together at high speed until combined and creamy.
Step 2
In another bowl using clean beaters beat the cream and confectioners' sugar together at high speed until stiff peaks form. Add the mixture to the cream cheese mixture and beat at medium speed until combined and then beat in the vanilla. Cover and refrigerate for at least one hour.
Step 3
In a bowl combine the pears and lemon juice; toss. Add the satsuma segments (see note).
Step 4
Reserve 4 cookies for garnish but crush all the remaining cookies with a rolling pin or another heavy object.
Step 5
Using 4 individual serving dishes or glasses, layer crushed cookies, cream cheese mixture and then the fruit mixture in layers, repeating as desired. ****Can be refrigerated for up to 2 hours before serving. Garnish with whipped topping and reserved cookies, if desired.
