"I have made lots of ketchup from scratch - usually for special occasions ... and this is one of the best. It comes from creative-culinarydotcom; and, it is delicious. She also used it on her burger; but, I decided to use it ... not only on my 'Sarasota's Guinness Burger #recipe23354 but, in my burger - and, on my fries too. Other than chopping up an onion and garlic; everything is simple pantry ingredients. Now, it does take some time to cook; but, there is nothing difficult about it. Also, this lasts a good 2 weeks in the refrigerator; but, it can also be frozen too. I froze some in a couple of small mason jars. I usually don't make this for just myself; but, it is really great for a special party or entertaining."

Step by Step Method
Step 1
Base ... Add the olive oil to a small pot; and, bring to medium heat. Add the onions, garlic clove, and red pepper flakes; and, saute for 5 minutes - then, remove the garlic clove. Add all the other ingredients; and, bring to a light boil. Then, reduce to medium low to low heat; and, simmer for 50 minutes.
Step 2
Finish ... After the sauce has thickened; puree the ketchup using an immersion blender; or classic blender. You want the sauce really smooth. Transfer to a mason jar or storage container to cool. Once cooled - put a lid on the jar or container; and refrigerate. I prefer to use a mason jar. This as mentioned, will last 2 weeks in the refrigerator; but, it freezes well too.
Step 3
I usually make this for a party / entertaining; so, I usually make a double batch. I can always freeze the leftovers. I use this not only ON my 'Sarasota's Guinness Burger - http://www.recipezazz.com/recipe/sarasotas-guinness-burger-23354' ... but IN my burger too. And, with my fries as well. Also, delicious on grilled hot dogs and brats; or with onion rings.
