Step by Step Method

Step 1

Put apple rings in a bowl ad sprinkle with caster sugar, brandy and nutmeg and toss and allow to stand at room temperature for 20 minutes.

Step 2

Meanwhile, to make the batter, whisk eggs, caster sugar, milk, oil and cloves in a large bowl until combined and then sift in flours and baking powder and whisk to form a batter, then stand for 20 minutes (if batter is too thick, add a splash more milk).

Step 3

Pour oil into a large deep saucepan until 5cm deep and heat to 180C on a cook's thermometer, or until bread cube turns golden in 30 seconds.

Step 4

Dust apple rings, one at a time, in flour, shaking of excess and dip into batter to coat, then shake of excess and then deep-fry apple rings in batches for 2 to3 minutes or until golden and tender.

Step 5

Drain on kitchen paper and dust with icing sugar and season with a little salt.

Step 6

Arrange apple fritters on a serving plate, drizzle with maple syrup and sprinkle over almonds and serve with ice-cream and/or cream.
