Step 1
Line a rimmed baking sheet with parchment paper and lightly drizzle with avocado oil.
Step 2
Place the fish on the parchment paper, skin side down and sprinkle with salt and pepper to taste.
Step 3
Mix the mayo and curry powder together and spread over the flesh of the fish with the back of a spoon, top with lemon slices if using.
Step 4
Place in a preheated 425 degree Fahrenheit oven and cook for 20 minutes or until the flesh flakes when poked with a fork, this will depend on the thickness of the fish.
