"The recipe calls for canned salmon, but freshly cooked salmon works even better. Adapted from The Alaskan Wilderness Cookbook, credited to Lois Armstrong. Cook time is chill time. Although the recipe states that these can be frozen, I would not recommend freezing because of the cream cheese."

Step by Step Method

Step 1

Combine cream cheese, salmon, lemon juice, onion, horseradish, liquid smoke, and salt.

Step 2

Blend until smooth.

Step 3

Shape into balls.

Step 4

Roll in chopped pecans, walnuts or olives.

Step 5

Chill until ready to serve.

These were very powerful balls of yummy goodness...I cut the recipe in half and got 5 nice size one...I used the pecans with the exception of one...that I covered with chopped green olives...that made it even more powerful...I served crackers on the side to spread them on...I tried to eat them by themselves but that was just to much...I used smoked salmon so omitted the liquid smoke and the salt...made for Best of 2014 tag game...

Made as written for Family Picks & the Agents of QUEST, I had a ball w/your recipe (pun intended). My DH is had a “guy music nite” last nite, so I made these easy-fix salmon balls as part of their appy snacks. I used freshly cooked salmon caught by my DH (Icelanders cannot abide canned salmon & I agree). Using 8 oz cream cheese & 16 oz salmon, my yield was way more than the 8-10 the recipe stated, so sizing is clearly a factor. I wanted a variety of texture & color, so I used all the optional ingredients (+ an extra) for rolling them (pecans, walnuts, pine nuts + a mix of green & black olives). Each was a “bite of bliss”. Thx for sharing this recipe.
