Step 1
Preheat oven to 220C.
Step 2
Heat oil in a frying pan over medium heat and cook onion, stirring occasionally for 54 minutes or until softened and then add sugar and vinegar, reduce heat to low and cook, stirring, for 5 to 7 minutes or until onion is caramelized and then set aside for 10 minutes to cool.
Step 3
Place pizza bases on two baking trays, spread with pizza sauce and sprinkle with cheese and caramelized onion and then arrange salami, capsicum and bocconcini on top of the pizzas.
Step 4
Bake for 12 to 15 minutes or until crust is golden and crisp and serve pizzas sprinkled with rocket.
Step 5
TIP - for extra flavour, use a pizza sauce with herbs and garlic.
