Step by Step Method

Step 1

Melt the butter in a saucepan over medium heat; sprinkle with salt. Pour half of the butter into a small bowl and set aside.

Step 2

Add chopped sage to the remaining butter that is left in the saucepan; stir over medium heat for 30 seconds.

Step 3

On a work surface arrange 8 bread slices, brush top side with the melted sage butter. Dived the fontina cheese among the bread slices. Sprinkle the Parmesan over, dividing equaling. Sprinkle with pepper. Top with remaining bread slices, pressing down. Brush top top of sandwiches with some of the reserved melted butter. Press 4 whole sage leaves atop each sandwich, pressing to adhere.

Step 4

Heat 2 skillets over medium heat. Place 4 sandwiches in each skillet, sage leaf side down and cook until golden brown (5 minutes). Brush top of sandwiches with remaining melted butter and turn sandwiches and cook until golden brown and cheese melts (3-5 minutes).

Step 5

Transfer sandwiches (leaf side up) to cutting board. Cut each sandwich into 4 pieces and place on platter for serving.

What a novel idea to add sage to these tasty grillies. So glad someone thought this up as they are yummy. I will make it a point to make grilled cheese sandwiches in this manner. Didn't serve it with soup this time, but I'm putting this on the menu next time I make a soup which by the looks of things is soon! Thank you ellie for sharing!!

I made just the one sandwich and was wishing I had more fontina cheese to make another, I served it with tomato soup and thoroughly enjoyed my lunch, thank you for sharing ellie, made for Pick Me tag game.

OMG! These are the best grilled cheese sammies EVER!It is the sage that makes these amazing. I used an aged Tillamook Cheddar for the Fontina and fresh sage from my garden. My grandson ate two of these for his lunch! Will be making these whenever I get the hankering. Thanks Ellie for sharing.
