Step by Step Method

Step 1

Soak the mushrooms in hot water 30 minutes

Step 2

In large stock pot cook chopped bacon

Step 3

Take out and save for garnish

Step 4

Add butter. Brown beef

Step 5

Add veggies. Saute onions, peppers ,garlic carrots until tender

Step 6

Add seasonings. Brown

Step 7

Add stock and mushrooms with water keep out grit

Step 8

Add bay leaf

Step 9

Cook for 1 hour covered

Step 10

Add sausage, cabbage, apple, beets,kidney beans, tomatoes,parsley and potatoes cook for another hour at simmer

Step 11

Last 5 minutes add sugar and vinegar

Step 12

Slice sausage and stir back into soup

Step 13

Bowl and add garnish ingredients along with bacon
