Ingredients

The ingredients are:
  • 1 pound stewing beef
  • 2 ounces sliced bacon (2 strips)
  • 2 tablespoons butter
  • 1 cup onion, chopped
  • 1 cup carrots, diced
  • 1 bay leaf
  • 6 cups beef stock
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cans (30 ounces) beets, cubed, (15 ounces each)
  • 1 ounce dried porcini mushrooms
  • 1 cup water, hot
  • 1 package (16 ounce) smoked sausage
  • 1 cup bell pepper ,chopped
  • 1 teaspoon paprika
  • 2 cups cabbage, shredded
  • 2 cups potatoes, diced (peeled)
  • 1 can (15 ounce) tomatoes
  • 1 cup apples, chopped
  • 1 can (15 ounce) kidney beans (drained)
  • 1 clove garlic, smashed
  • 2 tablespoons, parsley, minced
  • 2 tablespoons sugar
  • 2 tablespoons white vinegar
  • FOR GARNISH
  • 6 tablespoons sour cream
  • 6 tablespoons green onion,minced
  • 3 tablespoons dill,minced

How to Make

  • Step 1: Soak the mushrooms in hot water 30 minutes

  • Step 2: In large stock pot cook chopped bacon

  • Step 3: Take out and save for garnish

  • Step 4: Add butter. Brown beef

  • Step 5: Add veggies. Saute onions, peppers ,garlic carrots until tender

  • Step 6: Add seasonings. Brown

  • Step 7: Add stock and mushrooms with water keep out grit

  • Step 8: Add bay leaf

  • Step 9: Cook for 1 hour covered

  • Step 10: Add sausage, cabbage, apple, beets,kidney beans, tomatoes,parsley and potatoes cook for another hour at simmer

  • Step 11: Last 5 minutes add sugar and vinegar

  • Step 12: Slice sausage and stir back into soup

  • Step 13: Bowl and add garnish ingredients along with bacon
