Step 1: Soak the mushrooms in hot water 30 minutes
Step 2: In large stock pot cook chopped bacon
Step 3: Take out and save for garnish
Step 4: Add butter. Brown beef
Step 5: Add veggies. Saute onions, peppers ,garlic carrots until tender
Step 6: Add seasonings. Brown
Step 7: Add stock and mushrooms with water keep out grit
Step 8: Add bay leaf
Step 9: Cook for 1 hour covered
Step 10: Add sausage, cabbage, apple, beets,kidney beans, tomatoes,parsley and potatoes cook for another hour at simmer
Step 11: Last 5 minutes add sugar and vinegar
Step 12: Slice sausage and stir back into soup
Step 13: Bowl and add garnish ingredients along with bacon
