"This is a fantastic side dish that is simple and delicious!All ingredients can be adjusted to suit taste, if you are a garlic-lover like me then use lots of garlic don’t worry after roasting the flavor will mellow, I roast all of my root veggies using the same method and ingredients, rutabaga, parsnips, beets and even sweet potatoes or yams, just peel them and chop into about 2-inch pieces (larger size for yams)."

Step by Step Method

Step 1

Preheat oven to 400 degrees F, then set oven rack to lowest position,

Step 2

Prepare a large non-stick baking sheet (you can line with foil and spray the foil liberally with cooking spray).

Step 3

Pat dry the veggies well with a paper towel and place in a large bowl.

Step 4

In a small bowl combine olive oil, chopped garlic, coarse salt and black pepper; mix well to combine.

Step 5

Pour over the veggies and toss to coat with a wooden spoon or clean hands.

Step 6

Roast in oven for about 30 minutes or until the potatoes are fork-tender, tossing occasionally with a spatula (might take more or less time depending on the size of potatoes).

It rained here today so I decided to make a roast and made this to go with it. We loved them and I like that they aren't sitting in all the grease from the roast. It helps when your trying to watch your diet!

This is the way to go if you are making something in the oven anyway and want veggies to go with it. I have made these twice in the past few weeks and I love them. I did cut the recipe down and still had leftovers to have with other meals! Thanks for another trusted Kittencal recipe Carol! Linda

Great recipe, Everyone thinks I cak cook. I got Kittencal teaching me how. I made this for New Years day, to go along with your crock pot ham< which is wonderful, and your fried cabbage with bacon. We really liked the potatoes. I know I will be makeing them often, as also all the other wonderful recipes. Thanks Kitten

The potatoes and carrots are a great combination for roasted veggies! I did use shallots instead of garlic because that's what I had.

Wonderful potatoes and carrots with garlic !!! I was out of fresh garlic and had to use the chopped bottled which got over cooked but still left a good flavour. Can't wait to try it again with the proper fresh garlic. I will be roasted these again, sooo delicious , thanks for posting.
