Step by Step Method
Step 1
Rinse chicken, remove giblets and pat dry.
Step 2
Place on a rack in a roasting pan; place cut lemon halves inside cavity.
Step 3
Mix soft butter with remaining ingredients until smooth.
Step 4
Using your fingers, rub chicken all over with butter and gently work your fingers under the skin of the breast to rub butter there.
Step 5
Truss chicken with kitchen twine.
Step 6
Roast at 450F for 15 minutes, then reduce heat to 375F and roast for about 75 minutes or until an instant read thermometer shows 165F in the space between the breast and the thigh.
Step 7
Allow chicken to rest for 15 minutes before carving.
