"I just really love using tomato's this way, especially when they are fresh from the garden. Cooking them this way gives the tomatoes a rich and intense flavour. These are great as a side dish or can be cooled and used for other recipes such as salads, pasta or soups."

Step 1

Heat oven to 160c fan or 140 gas.

Step 2

Place the tomato halves on a baking sheet, scatter some of the garlic and thyme over each tomato, sprinkle each tomato with a little of the sugar and then drizzle over the balsamic vinegar and olive oil, sprinkle with salt and pepper to taste. Place tray in the oven and roast tomatoes for approx 1 hour.

Step 3

Remove tomatoes and serve as a side or cool them and refrigerate for later use.

Step 4

Garnish with basil leaves if desired.

Oh wow these are pretty good. I really like the fresh thyme on top of them. I only had one garlic clove left in my house, so my slices of them were itty bitty. I didn't put any basil on at the end. I'm looking forward to tasting them cold. I made this for the Billboard Recipe 2020 game in the forums.

Made for a tasty side dish to our chicken tonight! Love what the balsamic, thyme, garlic, olive oil, etc. do to the tomatoes. I misread the directions and chopped the garlic finely instead of slicing, sorry. I did top them with fresh chopped basil at the end which added even more brightness. To any leftover (that's if there is any), they will be used for making tomato soup. These will be made again especially with those tasty vine-ripened tomatoes. Thank you Tisme for sharing. Bergy (RIP" Forever in our Kitchen)

Great recipe to use up tomatoes. I served them at room temperature as a side dish with dinner. I would love them with scrambled eggs for a light dinner. I have put this recipe aside to make again during our tomato season.

I had loads of fresh garden tomatoes so I made a few batches of this and then canned them for future use. These taste amazing and can be used in ways. Thx for sharing this tasty recipe.
