Ingredients

The ingredients are:
  • 10 large (4 1/2 pounds) tomatoes (halved, vine ripened is best)
  • 2 garlic clove, sliced
  • 1/2 bunch thyme (chopped)
  • 3/4 tablespoon brown sugar
  • 3 tablespoons balsamic vinegar (good quality)
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Basil leave,s to garnish (optinal)

How to Make

  • Step 1: Heat oven to 160c fan or 140 gas.

  • Step 2: Place the tomato halves on a baking sheet, scatter some of the garlic and thyme over each tomato, sprinkle each tomato with a little of the sugar and then drizzle over the balsamic vinegar and olive oil, sprinkle with salt and pepper to taste. Place tray in the oven and roast tomatoes for approx 1 hour.

  • Step 3: Remove tomatoes and serve as a side or cool them and refrigerate for later use.

  • Step 4: Garnish with basil leaves if desired.
