Step by Step Method

Step 1

In saucepan, heat fat and add cracked cardamom pods and onion and saute until onion is translucent.

Step 2

Peel turmeric knob and grate on the fine side of the grater.

Step 3

Add drained rice, turmeric, raisins and pistachios to onion mixture and continue to cook until fragrant (about 5-7 minutes).

Step 4

Add water or broth and stir; cover and bring to boil; then reduce heat to low and cook for 12 minutes.

Step 5

After 12 minutes, take a fork, and gently pull rice aside to see if all water has been absorbed; if not, then give it a couple more minutes.

Step 6

When all water is gone, remove pan from heat and let sit for 5 minutes; then fluff with 2 forks (so it does not become gummy).

Step 7

Be sure to remove all cardamom pods before serving, they are inedible!

Served with roast chicken this made for a great weekend meal with plenty left over for rice bowls. Didn't have fresh turmeric, subbed with a teaspoon of dry which worked well for me. Added some raisins and I'm sure I would love the pistachios if I would have had a package. Saved along side my fav rice dish recipes.

Delicious -- I heard that fresh turmeric is anti-inflammatory so this is the first time I tried it and we really liked this rice. I also skipped the raisins and pistachios and used 4 cardamom pods. Very good and we will be having it again soon! Thanks for sharing!

Scrumptious!!! I didn't have basmati...only carnaroli, so I made a risotto version. For the raisins used the golden type. It was de-li-cious!Thank you Luv for sharing ❤

Yummy! This rice was a nice change of pace from the every-day-run-of-the-mill rice. I used all of the ingredients listed except that I used jasmine rice instead of the basmati and I used fresh minced ginger (about 1 ½ tablespoons) instead of the fresh tumeric. I looked high and low for fresh turmeric, including Asian stores, and I couldn’t find it anywhere, therefore I substituted by adding 1 ½ tsp. of turmeric powder. I used the 2 cardamom pods, but next time I may increase it to 3 – 4. Tasty and a repeat again keeper. Thank you Luvcookn for sharing.

Excellent! I did use the raisins and pistachios in mine- they add a very light sweetness which offsets the bitter in the turmeric. What I did was sweat the onions and spice then pulled that off the heat with everything else added and let the rice soak in the broth for the twenty minutes. Then I brought it back to a boil, and cooked for the 12 minutes. Pulled it off the heat and tucked a clean dish towel between the lid and pot and let it sit another 10-15 minutes (while I took pictures of my other recipes) and then I fluffed it and it was perfect. The reason I do the towel is that is sucks out the excess steam and makes rice fluffier and I also crack the cardamom pods and make sure to get the seeds out because the flavor is inside the pod and not in the husk. All was delicious- served the rice with grilled seekh kebabs and Greek tossed salad.

Quick, easy and really tasty!! I tossed in a handful of leftover cooked veggies instead of the raisins and pistachios and we really enjoyed this. Made for the Billboard Recipe Tag Game.
