Ingredients

The ingredients are:
  • 180 grams dry basmati rice (dry, 1 cup, rinsed until water is runs clear and soaked, 20 min)
  • 2 cups water (or broth)
  • 1 yellow onion, chopped
  • Fresh tumeric (1 knob)
  • 2 to 4 green cardamom pods, cracked
  • 28 grams coconut oil (2 tablespoons, or butter or ghee)
  • 1/4 cup raisins
  • 1/4 cup pistachio nuts
  • Salt to taste

How to Make

  • Step 1: In saucepan, heat fat and add cracked cardamom pods and onion and saute until onion is translucent.

  • Step 2: Peel turmeric knob and grate on the fine side of the grater.

  • Step 3: Add drained rice, turmeric, raisins and pistachios to onion mixture and continue to cook until fragrant (about 5-7 minutes).

  • Step 4: Add water or broth and stir; cover and bring to boil; then reduce heat to low and cook for 12 minutes.

  • Step 5: After 12 minutes, take a fork, and gently pull rice aside to see if all water has been absorbed; if not, then give it a couple more minutes.

  • Step 6: When all water is gone, remove pan from heat and let sit for 5 minutes; then fluff with 2 forks (so it does not become gummy).

  • Step 7: Be sure to remove all cardamom pods before serving, they are inedible!
