"I had a box of raspberry muffin mix and a banana that was getting too ripe,so I decided to combine them. And this is the very good result of that combination.And with a little adult supervision even kids could make this recipe.Submitted to " ZAZZ " on August 1st.,2012"

Step by Step Method

Step 1

Pre-heat oven to 400 degrees.Grease a muffin pan or line with paper liners.

Step 2

In a medium size bowl,mash banana and add rest of ingredients.

Step 3

Stir until dry mix is just moistened.

Step 4

Fill muffin cups 3/4ths.full.And bake for 20 minutes( check after 15) or until golden brown.

If anyone knows me ... they know I hate baking. But, I do bake, just not my favorite thing. Well these looks good. I made these for one of the ladies I cook for. I made it as posted, but I added walnuts. It was simple and a great way to JAZZ up a boxed mix. They turned out fantastic. I made a orange butter (butter, OJ and zest) to go with them and served them in a basket. They were very happy; and I was too. Easy and delicious. Make sure to use as stated; an overripe banana. Delish
