Step by Step Method

Step 1

Pre-heat oven to 350°.

Step 2

Warm up the leftover mashed potatoes in the microwave, then scoop them into a large mixing bowl. Add the rest of the POTATOES ingredients and mix well.

Step 3

Spread into a greased large, deep baking dish. Sprinkle the topping (for topping, combine cornflakes and butter) over the potatoes and bake for 45 minutes or until hot throughout.

These potatoes are great. I halved the recipe for just me and enjoyed them with 2 meals - with and without the corn flake topping. I can't wait to make these again for my family. Thanks for sharing this great keeper, NE Lady.

This was an awesome way to spruce up plain mashed potatoes. I used a round 2-quart baking dish, and like another reviewer, I only needed a little more than half of the buttered cornflake topping, and it was more than sufficient for the size of baking dish I used. But this is such an awesome recipe, and everyone loved it. Thank you for a wonderful recipe, NELady. This will definitely be repeated in my house (and probably quite often).

Just looking at the ingredients told me I couldn't go wrong with this recipe! What a wonderful potato dish. When Hubs watched me throw all that cheese and bacon in there he could hardly wait for dinner. He even ate some leftover for breakfast this morning!
