  • 2 pounds mashed potatoes (left-over works great, approximate amount)
  • 1/2 cup sour cream
  • 1/2 cup Ranch salad dressing (bottled, your favorite)
  • 1 to 2 ounce bacon, chopped (real bacon bits or crumbled bacon, 1/4 cup)
  • 1 teaspoon dried parsley
  • 1 1/2cups shredded cheddar cheese
  • FOR TOPPING
  • 2 cups crushed cornflakes
  • 1/4 cup butter, melted

How to Make

  • Step 1: Pre-heat oven to 350°.

  • Step 2: Warm up the leftover mashed potatoes in the microwave, then scoop them into a large mixing bowl. Add the rest of the POTATOES ingredients and mix well.

  • Step 3: Spread into a greased large, deep baking dish. Sprinkle the topping (for topping, combine cornflakes and butter) over the potatoes and bake for 45 minutes or until hot throughout.
