Step 1

Preheat oven to 350°.

Step 2

Wash pumpkin and cut a lid in the top.

Step 3

Scrape out seeds and clean.

Step 4

Combine remaining ingredients in a mixing bowl and toss gently.

Step 5

Spoon mixture into pumpkin shell.

Step 6

Replace lid and place pumpkin on lightly greased cookie sheet.

Step 7

Bake for 1 hour and 15 minutes.

Step 8

Remove from oven.

Step 9

Top with sour cream if desired.

Step 10

May be served hot or cold.

I scaled back for one serve and used a mini pumpkin that weighed just over 400 grams and cooked for just over 50 minutes in a 175 C oven and could only get through half of it so left overs today for lunch and will be interesting as to how the flavours changes but as it is quite sweet I think it will go well.
