Step by Step Method

NOTES: Any fresh pork roast including Picnic can be used. It's best if the orange juice is a little bit bitter. You can combine orange juice and lime juice to make the 3/4 cup.


Step 1

Trim fat from roast and, with a knife pierce some holes on top of the roast.

Step 2

Mash garlic with salt and add other ingredients except onions.

Step 3

Rub this on roast and insert some in the holes.

Step 4

Place the roast in a plastic bag or glass dish. Cover with onions and refrigerate, at least overnight.

Step 5

Bake in a covered baking pan at 275 degrees F. for 5-6 hours. Low temps work best.

Step 6

Turn once halfway through cooking.

Step 7

Take roast out of the oven and let stand 20 minutes before carving.

This can be made in a crockpot on low for 8 hours. It shreds easily to make great sandwiches.

Wow what great flavor and it was as fall apart tender as promised. I used leftovers to make Cuban sandwich and was told the pork tasty and a great addition. Thanks for the post. Will be using this again.
