Step 1: Trim fat from roast and, with a knife pierce some holes on top of the roast.
Step 2: Mash garlic with salt and add other ingredients except onions.
Step 3: Rub this on roast and insert some in the holes.
Step 4: Place the roast in a plastic bag or glass dish. Cover with onions and refrigerate, at least overnight.
Step 5: Bake in a covered baking pan at 275 degrees F. for 5-6 hours. Low temps work best.
Step 6: Turn once halfway through cooking.
Step 7: Take roast out of the oven and let stand 20 minutes before carving.
Step 8: Crockpot:
Step 9: This can be made in a crockpot on low for 8 hours. It shreds easily to make great sandwiches.
