Step by Step Method

Step 1

Combine first 11 ingredients (chicken - rosemary) in a medium bowl; toss well. Set aside.

Step 2

Cut baguette in half horizontally. Hollow out top and bottom halves of loaf, leaving a 1/2-inch border. Reserve torn bread for another use.

Step 3

Arrange lettuce and tomato on bottom half of loaf. Spoon chicken mixture evenly over lettuce and tomato. Replace top half of loaf; cut crosswise into 4 equal portions.

What a delicious sandwich...I cut the recipe in half and had plenty leftover chicken mixture to make more sandwiches...I put the mixture on before realizing that the lettuce and tomato was suppose to go on first...oh well...I'm pretty sure it didn't effect the flavor...I omitted the olives (we aren't fans)...and I used sweet onions...the mixture was a bit on the dry side so I added extra olive oil and some of the caper juice...turned out wonderful...thanks for sharing the recipe...made for "Billboard" tag game...
