Step by Step Method
Step 1
Melt butter in large saucepan.
Step 2
Add chopped onions and mix well.
Step 3
Add beef broth, celery leaves and potato.
Step 4
Bring to boil, cover and simmer 30 minutes.
Step 5
Puree mixture in blender (in batches if necessary), (be careful blending hot liquid, it expands) or use a stick blender.
Step 6
Return to saucepan and blend in wine, vinegar and sugar.
Step 7
Bring to boil and simmer five minutes.
Step 8
Stir in cream, parsley and salt and pepper to taste.
Step 9
Heat to serving temperature but do not boil.
