Step 1

Melt butter in large saucepan.

Step 2

Add chopped onions and mix well.

Step 3

Add beef broth, celery leaves and potato. Bring to boil, cover and simmer 30 minutes.

Step 4

Puree mixture in blender (in batches if necessary),(be careful blending hot liquid,it expands.)or stick blender. Return to saucepan and blend in wine, vinegar and sugar.

Step 5

Bring to boil and simmer five minutes. Stir in cream, parsley and salt and pepper to taste.

Step 6

Heat to serving temperature but do not boil
