Ingredients

The ingredients are:
  • 1/4 cup butter
  • 6 cups onions, chopped
  • 5 cups beef broth
  • 1 cup celery leaves
  • 1 cup potato, peeled, sliced
  • 1 cup dry white wine
  • 1 tablespoon vinegar
  • 2 teaspoons sugar
  • 8 ounces light cream, (1 cup )
  • 1 tablespoon fresh parsley, minced
  • 1/4 teaspoon salt, to taste
  • 1/4 teaspoon pepper, to taste

How to Make

  • Step 1: Melt butter in large saucepan.

  • Step 2: Add chopped onions and mix well.

  • Step 3: Add beef broth, celery leaves and potato.

  • Step 4: Bring to boil, cover and simmer 30 minutes.

  • Step 5: Puree mixture in blender (in batches if necessary), (be careful blending hot liquid, it expands) or use a stick blender.

  • Step 6: Return to saucepan and blend in wine, vinegar and sugar.

  • Step 7: Bring to boil and simmer five minutes.

  • Step 8: Stir in cream, parsley and salt and pepper to taste.

  • Step 9: Heat to serving temperature but do not boil.
