Step by Step Method
Step 1
Preheat oven to 350 degrees
Step 2
Cut chicken (if your using whole chicken)into pieces of desired size
Step 3
Wipe pieces dry and season with pepper and salt
Step 4
Dredge the pieces lightly with seasoned flour(I put it in brown paper bag and shake the heck out of it )
Step 5
Fry them in lard(they probably used lard)or butter until they are brown on all sides
Step 6
When they are done, take them out of the frying pan and keep them hot in a covered pan in oven
Step 7
Move the brown bits in the frying pan and put the cream into it
Step 8
Season with nutmeg, mace, salt and pepper to taste
Step 9
Thicken with a small bit of butter rolled in flour
Step 10
Whisk carefully to be sure that the mixture is smooth
Step 11
Give it a boil and then add the pieces of chicken back in and simmer a tiny bit until chicken is cooked through. Check by piercing with a knife .no blood chicken is cooked
