Step by Step Method
Step 1
Peel and separate hard egg yolks from whites and chop egg whites coarsely in a small bowl.
Step 2
Sieve egg yolks through a strainer to make a fluffy texture (best if done while yolks are still warm, easier).
Step 3
Set aside.
Step 4
In a sauce pan, over medium to low heat, combine butter, salt, pepper and flour, blend until it forms a paste.
Step 5
Add milk a little at a time, whisking constantly, and blend until smooth, sauce will thicken as it heats.
Step 6
Retain on low heat.
Step 7
Blend in cheese .
Step 8
Add dried beef, minced and chopped egg whites to sauce.
Step 9
Spoon egg/dried dried beef mixture over muffin halves.
Step 10
A small amount of parsley may be added for color. Spoon fluffy egg yolks over the top. You might want to use more eggs.
