Ingredients

The ingredients are:
  • 4 eggs, hard boiled
  • 2 tablespoons butter
  • 1/4 teaspoon salt, to taste
  • 1/4 teaspoon black pepper, to taste
  • 2 tablespoons flour
  • 1 cup milk
  • 2 ounces cheddar cheese, sharp, shredded
  • 2 ounces dried beef (1 jar)
  • 8 ounces English muffins, toasted
  • 1 tablespoon parsley, fresh, minced

How to Make

  • Step 1: Peel and separate hard egg yolks from whites and chop egg whites coarsely in a small bowl.

  • Step 2: Sieve egg yolks through a strainer to make a fluffy texture (best if done while yolks are still warm, easier).

  • Step 3: Set aside.

  • Step 4: In a sauce pan, over medium to low heat, combine butter, salt, pepper and flour, blend until it forms a paste.

  • Step 5: Add milk a little at a time, whisking constantly, and blend until smooth, sauce will thicken as it heats.

  • Step 6: Retain on low heat.

  • Step 7: Blend in cheese .

  • Step 8: Add dried beef, minced and chopped egg whites to sauce.

  • Step 9: Spoon egg/dried dried beef mixture over muffin halves.

  • Step 10: A small amount of parsley may be added for color. Spoon fluffy egg yolks over the top. You might want to use more eggs.
