Step 1: Peel and separate hard egg yolks from whites and chop egg whites coarsely in a small bowl.
Step 2: Sieve egg yolks through a strainer to make a fluffy texture (best if done while yolks are still warm, easier).
Step 3: Set aside.
Step 4: In a sauce pan, over medium to low heat, combine butter, salt, pepper and flour, blend until it forms a paste.
Step 5: Add milk a little at a time, whisking constantly, and blend until smooth, sauce will thicken as it heats.
Step 6: Retain on low heat.
Step 7: Blend in cheese .
Step 8: Add dried beef, minced and chopped egg whites to sauce.
Step 9: Spoon egg/dried dried beef mixture over muffin halves.
Step 10: A small amount of parsley may be added for color. Spoon fluffy egg yolks over the top. You might want to use more eggs.
