Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

Put the first 6 ingredients in a bean pot or ovenproof pot; stir to combine.

Step 3

Top mixture with the onion slices and then lay the bacon over the top in a single layer.

Step 4

Bake, uncovered, until the bacon is crisp and the beans are hot and bubbling (1 hour).

Step 5

Remove from oven and allow to cool slightly and then stir the onions and bacon into the beans.

These beans were good, but they were greasy from the bacon. Next time I may use the packaged real bacon bits, to avoid the grease.

I cut the recipe back to 2 servings. A small can of beans (225g). Because it was so small I made to recipe stove top with excellent results. It didn't look as pretty but it tasted just as good. I chopped the bacon, used pickled onion vinegar. A perfect side dish for Sunday Brunch. Thanks ellie for this do again recipe
