Step by Step Method

Step 1

In a small bowl, combine all the ingredients, except for the olive oil and pork chops.

Step 2

Using a small whisk, gradually add the olive oil to make an emulsion.

Step 3

Set aside 45 ml (3 tbsp.) of this mixture for the accompaniment*.

Step 4

Marinate the pork chops in the remaining mixture for 30 minutes at room temperature or, if possible, 2 to 3 hours in the refrigerator.

Step 5

Preheat the barbecue to medium-high and oil the grill.

Step 6

Remove the pork chops from the marinade, draining thoroughly.

Step 7

Season with salt and pepper and grill for about 5 minutes on each side.

What a nice tasty pork chop...I forgot to save some of the marinade to dip the chops in...I will remember next time...I would never have thought that maple syrup and dijon mustard would taste so good together...made for "FYC" tag game...
