Ingredients

The ingredients are:
  • 720 grams pork loin chops (4 chops, each 180 gram/1/3 lb.)
  • 6 tablespoons olive oil
  • 4 tablespoons Dijon mustard
  • 4 tablespoons maple syrup
  • 3 garlic cloves, minced
  • 1 whole lemon (zest and juice of)
  • Salt and freshly ground black pepper

How to Make

  • Step 1: In a small bowl, combine all the ingredients, except for the olive oil and pork chops.

  • Step 2: Using a small whisk, gradually add the olive oil to make an emulsion.

  • Step 3: Set aside 45 ml (3 tbsp.) of this mixture for the accompaniment*.

  • Step 4: Marinate the pork chops in the remaining mixture for 30 minutes at room temperature or, if possible, 2 to 3 hours in the refrigerator.

  • Step 5: Preheat the barbecue to medium-high and oil the grill.

  • Step 6: Remove the pork chops from the marinade, draining thoroughly.

  • Step 7: Season with salt and pepper and grill for about 5 minutes on each side.
