Step 1: In a small bowl, combine all the ingredients, except for the olive oil and pork chops.
Step 2: Using a small whisk, gradually add the olive oil to make an emulsion.
Step 3: Set aside 45 ml (3 tbsp.) of this mixture for the accompaniment*.
Step 4: Marinate the pork chops in the remaining mixture for 30 minutes at room temperature or, if possible, 2 to 3 hours in the refrigerator.
Step 5: Preheat the barbecue to medium-high and oil the grill.
Step 6: Remove the pork chops from the marinade, draining thoroughly.
Step 7: Season with salt and pepper and grill for about 5 minutes on each side.
