Step by Step Method

Step 1

Preheat oven to 450 degrees F.

Step 2

In a cup or bowl whisk together the 1 tablespoon of oil, mustard and maple syrup. Place chops on one side of a rimmed cookie sheet (save room for the carrots) and brush the top with the mixture. Place carrots on the other side and drizzle with the remaining 3 tablespoons of oil. Sprinkle garlic, ginger and turmeric on the carrots and toss. Roast for 10 minutes.

Step 3

Turn broiler to high. Broil until done (145 degrees F for pork) (under 5 minutes) and continue cooking carrots, if desired, until tender (under 5 minutes). Sprinkle with the parsley.

I made this using fast fry pork chops and did not use the broiler for the carrots, instead roasted everything for 20 minutes, turning the chops after 15 minutes, and broiled the chops for 5 minutes, which worked perfectly.
