Step by Step Method
Step 1
Preheat oven to 450 degrees F.
Step 2
In a cup or bowl whisk together the 1 tablespoon of oil, mustard and maple syrup. Place chops on one side of a rimmed cookie sheet (save room for the carrots) and brush the top with the mixture. Place carrots on the other side and drizzle with the remaining 3 tablespoons of oil. Sprinkle garlic, ginger and turmeric on the carrots and toss. Roast for 10 minutes.
Step 3
Turn broiler to high. Broil until done (145 degrees F for pork) (under 5 minutes) and continue cooking carrots, if desired, until tender (under 5 minutes). Sprinkle with the parsley.
