Ingredients

The ingredients are:
  • 4 tablespoons olive oil
  • 1 tablespoon mustard
  • 1 tablespoon maple syrup
  • 4 (bone-in) 1/2 inch thick pork chops
  • 1 1/2 pounds carrots, cut diagonally into 1/4 inch slices
  • 2 teaspoons garlic, chopped
  • 1 teaspoon ginger, chopped and peeled
  • 1/2 teaspoon turmeric, ground
  • 3/4 teaspoon salt
  • 3/4 teaspoon pepper, ground
  • 1/4 cup parsley, chopped

How to Make

  • Step 1: Preheat oven to 450 degrees F.

  • Step 2: In a cup or bowl whisk together the 1 tablespoon of oil, mustard and maple syrup. Place chops on one side of a rimmed cookie sheet (save room for the carrots) and brush the top with the mixture. Place carrots on the other side and drizzle with the remaining 3 tablespoons of oil. Sprinkle garlic, ginger and turmeric on the carrots and toss. Roast for 10 minutes.

  • Step 3: Turn broiler to high. Broil until done (145 degrees F for pork) (under 5 minutes) and continue cooking carrots, if desired, until tender (under 5 minutes). Sprinkle with the parsley.
