"Every salmon recipe I've seen calls for either baking, grilling or broiling. We're in the middle of record-breaking heat, so I was not interested in any of those options, so I decided to poach it. And then it needed some sauce. This came out even better than I expected!"

Step by Step Method

Step 1

Combine all sauce ingredients in a food processor or small food chopper and blend until onion and dill are finely chopped. If desired, do this ahead of time and chill until needed.

Step 2

Pour enough water in a large skillet to reach a depth of 1 inch; add 1 tablespoon cider vinegar and bring to a boil.

Step 3

Add salmon fillets in a single layer without crowding, reduce heat to low, cover and simmer 10 minutes or until fish flakes easily when tested with a fork.

Step 4

Remove fish from skillet and serve with Horseradish-Dill sauce.
