Ingredients

The ingredients are:
  • 1 to 2 cups water (to reach a depth of 1 inch in a large skillet)
  • 1 tablespoon cider vinegar
  • 24 ounces salmon fillets (4 pieces of salmon fillet, about 6 ounces each)
  • FOR SAUCE
  • 2 tablespoons fresh dill
  • 1 green onion, chopped
  • 1/2 cup olive oil mayonnaise
  • 1/2 cup low-fat sour cream
  • 1 tablespoon prepared horseradish
  • 1 tablespoon cider vinegar
  • 2 teaspoons Dijon mustard

How to Make

  • Step 1: Combine all sauce ingredients in a food processor or small food chopper and blend until onion and dill are finely chopped. If desired, do this ahead of time and chill until needed.

  • Step 2: Pour enough water in a large skillet to reach a depth of 1 inch; add 1 tablespoon cider vinegar and bring to a boil.

  • Step 3: Add salmon fillets in a single layer without crowding, reduce heat to low, cover and simmer 10 minutes or until fish flakes easily when tested with a fork.

  • Step 4: Remove fish from skillet and serve with Horseradish-Dill sauce.
