Step by Step Method

Step 1

Set skillet over medium heat. Crumble sausage into pan and cook, stirring to break it up, until browned. Transfer to clean plate. Add onion to skillet and cook, stirring often, until soft, about 6 minutes. Add sausage back to skillet with onion, then add rice, pizza sauce, Parmesan and Italian seasoning. Season with salt and pepper.

Step 2

Preheat oven to 350°F. If using large peppers, cut in half and remove seeds and stem; for small peppers, remove tops and seeds. Season with salt and pepper. Spoon stuffing into peppers. P;ace in baking dish; add about 1/2 inch water to dish and cover with foil. Bake 30-40 minutes, until peppers are tender and sausage reaches a safe internal temperature of 165°F. Set oven to broil. Remove foil and top each pepper with a slice of cheese, broil 2-3 minutes until lightly browned.

I made this as instructed, using my homemade Italian Sausage and fresh mozzarella and this was amazing. Hubby had a second serving which very rarely happens.

Good stuff, Teresa! I haven’t made stuffed peppers in a while and this was a delightfully tasty version. The “pizza” flavor is there and shines and thumbs up from the fam.! I did add a bit of red pepper flakes, but followed the rest as directed. I did transfer the peppers to a different pan for broiling, because a bit of the water seemed to have seeped into the peppers that were cut lengthwise. Thanks so much, Teresa, for sharing! Made it for Billboard tag.

These are good and different from the usual type of stuffed peppers. I had a lot of filling and filled 5 peppers (10 halves) with more filling to spare which I am putting in a small casserole for a lunch latter this week. I used pizza seasoning from Penezys which worked out well. Thanks for sharing.
