Ingredients

The ingredients are:
  • 1 pound Italian sausage (bulk or links, casings removed)
  • 1 medium onion, diced
  • 2 cups cooked rice
  • 1 1/2 cups pizza sauce
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 342 to 684 grams bell peppers (3 large or 6 small)
  • 6 slices (6 ounces) mozzarella cheese

How to Make

  • Step 1: Set skillet over medium heat. Crumble sausage into pan and cook, stirring to break it up, until browned. Transfer to clean plate. Add onion to skillet and cook, stirring often, until soft, about 6 minutes. Add sausage back to skillet with onion, then add rice, pizza sauce, Parmesan and Italian seasoning. Season with salt and pepper.

  • Step 2: Preheat oven to 350°F. If using large peppers, cut in half and remove seeds and stem; for small peppers, remove tops and seeds. Season with salt and pepper. Spoon stuffing into peppers. P;ace in baking dish; add about 1/2 inch water to dish and cover with foil. Bake 30-40 minutes, until peppers are tender and sausage reaches a safe internal temperature of 165°F. Set oven to broil. Remove foil and top each pepper with a slice of cheese, broil 2-3 minutes until lightly browned.
