"I used to make these for my kids all the time, they like changing up the ingredients, like adding pineapple or onion ~ whatever took their fancy on the day. It's not until I saw this recipe on Dairy Australia recipes that I remembered making these. Use wholemeal crumpets or lite/ salt reduced produce if you want these to be healthier."

Step by Step Method
Step 1
Spread each crumpet with the tomato paste & top crumpets with the ham, mushroom and capsicum; then sprinkle each with cheese and oregano.
Step 2
Grill crumpets under a hot grill until cheese is melted & golden and crumpets are crisp.
Step 3
Serve immediately.
