Step by Step Method

Step 1

In a saucepan combine first three ingredients. Stir in the diced pineapple and all the juice from the can; bring to a boil stirring constantly until thickened (about 2-3 minutes).

Step 2

Stir in the lemon juice. Add in the beets, stirring to coat with the pineapple mixture.

Step 3

Serve immediately or keep warm on top of the stove until ready to serve.

I used fresh beets, then julienned them and added the other ingredients. This was a perfect match to my delicious ham and we loved the combination of the two of them together. I see myself serving this any time I make ham. Such a great one to serve with it, and it's easy to boot!

I was making hot dogs and beans Saturday night and when I saw this I had to make it to go with them. I used canned beets and they are just as good as fresh. We had our first bite and were hooked right there!
