Step 1: In a saucepan combine first three ingredients. Stir in the diced pineapple and all the juice from the can; bring to a boil stirring constantly until thickened (about 2-3 minutes).
Step 2: Stir in the lemon juice. Add in the beets, stirring to coat with the pineapple mixture.
Step 3: Serve immediately or keep warm on top of the stove until ready to serve.
