Step by Step Method

Step 1

Preheat the oven to 350 degrees F.

Step 2

Heat the olive oil over medium heat, in an ovenproof pan. Add the garlic, cumin and oregano and cook for a minute. (Don’t let garlic brown).

Step 3

Add the rice and pine nuts and stir to coat well. Add the chicken stock, stirring well and raise the heat to high.

Step 4

When the liquid comes to a boil, cover the pot and put in the oven for 20 minutes.

Step 5

Remove from the oven. Stir to fluff and serve.

This was SO good - I did not finish in the over b/c it was too hot out, so I kept it on the stove top on very low. Perfect!

This has great flavor -- would be a great addition to taco night. I didn't have the full amount of pine nuts in the package in the pantry, but the bites with the pine nuts were my favorite and I wish I'd had some more to add. I had a small sprinkle of green onion leftover from another recipe I was making, so I added that as garnish.

We took this to a get together and had it with tacos. This is very good. I like things not really spicy, so I enjoyed this with tacos.
