Step by Step Method

Step 1

Mix all ingredients except olive oil in a medium-sized pot/pan. Cook covered on low heat until onions are soft and translucent.

Step 2

With tongs or fork remove onions and place in a bowl. Strain liquid into the bowl with onions and discard the aromatics left in the sieve.

Step 3

Add the olive oil over the onions and stir to combine.

Step 4

Let cool and reserve in refrigerator.

We really like the flavor of these pickles onions. We had them on top of turkey burgers and it was delightful! I wished I had cooked them a little less until it was crisp-tender, but they came out wonderful anyway. Thank you, Lazyme, for sharing. Made it for The Joy of Vegetables.
