  • For best results, use fresh shrimp that has been peeled and deveined.
  • Use any combination of bell peppers you prefer. Feel free to add other vegetables to the skewers as well.

  • For an extra kick of flavor, substitute the pesto for 3 tablespoons of hot sauce. This will add a spicy element to the kebabs that will contrast nicely with the sweetness of the bell peppers.
  • For a healthier option, substitute the shrimp for 3 cups of diced tofu. This will reduce the overall calories in the dish while still providing a satisfying texture and flavor.

Lemon Garlic Shrimp Kebabs Combine 3 tablespoons lemon juice, 2 cloves minced garlic, and 1 1/2 pounds shrimp (large, fresh shrimp, peeled and deveined, about 32 shrimp) in a bowl. Let stand for 5 minutes. Thread shrimp and bell peppers onto skewers, alternating shrimp and peppers. Sprinkle evenly with 1/4 teaspoon kosher salt. Grill on a medium grill for 7 minutes, turning once.

Garlic Parmesan Roasted Potatoes: Roasted potatoes are the perfect side dish to this flavorful shrimp kebab. The garlic and parmesan flavors will complement the pesto and lemon juice in the marinade, and the potatoes will add a nice crunch to the meal.

Grilled Asparagus: Grilled asparagus is the perfect complement to this flavorful shrimp kebab. The char from the grill will bring out the asparagus' natural sweetness, and the bright green color will add a nice contrast to the meal. Plus, the asparagus is a great source of fiber and vitamins, making it a healthy addition to the plate.

Easy to make & delicious. I use Argentine Shrimp - they are so nice & firm. I broiled the kebabs for 10 minutes, 5 minutes each side. Thanks Breezer for a lovely recipe.
