"Instead of breaded deep fried tomatoes this is a tasty lighter version. Hope you enjoy it. Cook longer than 5 minutes if you like your veggies well done. I like to serve this as a side for brunch along with eggs. I also used green cherry tomatoes and they were perfect. Add some leftover meat if you like."
