"An adaption of a recipe I saw on a cooking show. Times are estimated. I have made a 1/3 of a recipe (6 wings) which was one serve with some stir fry vegetables and thoroughly enjoyed, just make sure you have napkins or damp face washers for people to clean hands and face."

Step by Step Method
Step 1
Pre heat oven to 200 degrees C.
Step 2
Cut through the joints of the wings and separate into drumettes, wingettes and tips and set the wing tips aside or place into the freezer for use in another recipe eg makes great stock.
Step 3
Arrange the wing pieces onto a baking tray lined with a wire rack so the wings are elevated from the base of the tray and sprinkle with sea salt and bake for 35-40 minutes, or until the wings are golden and the skin has gone crispy.
Step 4
Remove from the oven and place the wings into a large bowl while they are hot and toss with the kacap manis and black pepper until the wings are glossy and evenly coated in the sauce.
Step 5
Place on a platter and serve with extra cracked pepper and lime wedges.
