Step by Step Method
Step 1
In large pot, melt butter.
Step 2
Add oil and heat over medium-high heat.
Step 3
Add bell pepper, onion and celery and sauté until tender.
Step 4
Add chicken.
Step 5
Stir in potatoes and flour and cook 2 minutes, stirring.
Step 6
Add broth with bay leaf, salt, pepper flakes, thyme, allspice and cloves.
Step 7
Bring to a boil, cover, reduce heat and simmer 20 minutes, stirring occasionally until potatoes are tender.
Step 8
Add 1/2 and 1/2 cream.
Step 9
Simmer 15 minutes.
Step 10
Remove bay leaf.
Step 11
Add pepper and parsley.
