Ingredients

The ingredients are:
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 1 1/2 cups green bell pepper, chopped
  • 1 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1 pound potatoes, diced (2 cups)
  • 2 tablespoons flour
  • 5 1/2 cups chicken broth
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon ground allspice
  • 1/8 t teaspoon ground cloves
  • 8 ounces skinless boneless chicken breast halves, cut in 1-inch pieces
  • 4 ounces light cream (1/2 cup half-and-half )
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

How to Make

  • Step 1: In large pot, melt butter.

  • Step 2: Add oil and heat over medium-high heat.

  • Step 3: Add bell pepper, onion and celery and sauté until tender.

  • Step 4: Add chicken.

  • Step 5: Stir in potatoes and flour and cook 2 minutes, stirring.

  • Step 6: Add broth with bay leaf, salt, pepper flakes, thyme, allspice and cloves.

  • Step 7: Bring to a boil, cover, reduce heat and simmer 20 minutes, stirring occasionally until potatoes are tender.

  • Step 8: Add 1/2 and 1/2 cream.

  • Step 9: Simmer 15 minutes.

  • Step 10: Remove bay leaf.

  • Step 11: Add pepper and parsley.
