Step by Step Method

Step 1

Peanut butter: Combine peanut butter and pecans in a food processor and purée until almost smooth.

Step 2

Dry: Whisk together flour, baking soda, and salt in a small bowl.

Step 3

Cream: Using an electric mixer, beat both sugars and butter in a large bowl until fluffy, about 3 minutes.

Step 4

Add peanut butter mixture and vanilla.

Step 5

Beat to blend well.

Step 6

Beat in egg.

Step 7

Add dry ingredients and mix until well combined and add both oats.

Step 8

Continue to blend at high speed for 1 minute.

Step 9

Cover bowl with plastic wrap and refrigerate overnight.

Step 10

Next day, preheat oven to 375°F.

Step 11

Line 2 baking sheets with foil.

Step 12

Scoop rounded balls of dough (2 teaspoons each) onto cookie sheets, spacing 1" apart.

Step 13

Bake until light golden, 10 minutes (rotate baking sheets 180 degrees halfway through baking).
